Chocolate Sorbet
For my birthday this summer, I bought myself an ice cream maker. The first batch I made was a creamy mocha ice cream. I couldn't wait to try Ina's recipe for chocolate sorbet.
Chocolate Sorbet
- 2 cups sugar
- 1 cup very good cocoa powder, such as Pernigotti
- 1/2 teaspoon pure vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon kosher salt
- 1/2 cup brewed espresso (2 shots)
- 1 tablespoon coffee liqueur, such as Tia Maria
- In a large saucepan, mix the sugar, cocoa powder, vanilla, cinnamon, and salt. Stir in 4 cups water and the espresso. Cook over low heat until the ingredients are dissolved. Off the heat, sir in the coffee liqueur. Transfer to plastic containers and refrigerate until very cold.
- Freeze the mixture in 2 batches in an ice cream freezer according to the manufacturer's directions. The sorbet will still be soft; place it in plastic containers and freeze for an hour or overnight, until firm enough to scoop.
What I changed:
I only made half a recipe. That much chocolate anything in the house is dangerous.
What I'd change next time:
Nothing. Absolutely nothing.
Disasters:
So neither Dave nor I are big drinkers. We didn't have coffee liqueur sitting around the house. Dave had to go out, so I sent him to the liquor store to get a small bottle of that plus some amaretto for something else I was thinking about making. He comes back with two giant bottles. One of amaretto one of a Bailey's with Coffee. Enough to make the entire street drunk. So I sent him back and he comes back with a slightly smaller bottle of amaretto and a fairly large bottle of Starbucks Cream Liqueur. Not quite right. I'd like to point out that the good people at our liquor store are the ones sending him home with these things when asked for coffee liqueur. The third trip resulted in Starbucks Coffee Liquor. Third time's a charm!
Overall Impression:
Seriously, would could be bad about chocolate sorbet? It was very chocolaty. You didn't taste the coffee but there was enough to amp up the chocolate which is exactly what it's supposed to do. The texture was slightly grainy, but that is probably a result of my ice cream maker. It was rich without being heavy. Still I could only eat a small amount.
